Fall’s officially here, and this weather has us craving some seasonal flavors. Luckily, chef-owner Chris McLaurin of Lutra Cafe and Bakery in Durham has got us covered with his roasted pumpkin and caramelized onion quiche for an autumnal, crowd-pleasing breakfast. Pro tip: Find an NC-grown pumpkin, sweet potato, or butternut squash at a local farmers market.

Roasted Pumpkin and Caramelized Onion Quiche

Directions:
  1. Sauté sliced onion in butter over medium-low heat until caramelized, about 20 minutes. Season to taste with salt and pepper. Allow caramelized onions to cool.
  2. Preheat oven to 400 degrees.
  3. Peel the pumpkin and cut into 1 inch cubes. Toss with olive oil and roast until tender and lightly browned — around 15 to 20 minutes, stirring after 10 minutes. Allow roasted pumpkin to cool.

Even though homemade pie crusts and I hardly ever get along, I can’t wait to make that quiche. I’m all for pumpkin spice, but we have to embrace savory pumpkin, too.
