Colcannon (Irish mashed potatoes) 🧑🍳 Submitted by reader Kayla D. 🔪 Prep time: 15 minutes 🥘 Cook time: 1 hour ✍️ Editors’ notes: Did you know? Carolina colcannon is a Southern American adaptation of the traditional Irish dish. The word colcannon is from the Gaelic cal ceannann’ which literally means “white-headed cabbage.”
Dennis family casserole 🧑🍳 Submitted by reader Maggie S. 🔪 Prep time: 20 minutes 🥘 Cook time: 30-40 minutes ✍️ Author’s note: This recipe has been a family tradition since at least the 1960s when my Aunt Lucy first served it — it is always on the table at Thanksgiving (and Christmas). It’s creamy, silky, crunchy, and lovely. But don’t count calories with this one!

Civic ○ To help prevent the spread of COVID-19, the City of Raleigh has cancelled all public events through March 31, 2021 — including festivals, parades, and races. The decision was announced after yesterday’s City Council meeting. Drink ○ Cotton House Craft Brewers will open its second location in downtown Cary next year. The brewery will move in at the former Jordan Lake Brewing Company space located at 320 E. Gallery ○ Yesterday, the NC Museum of Natural Sciences announced its acquisition of the fossils comprising the world’s first complete Tyrannosaurus rex (T. Rex) dinosaur, which were uncovered in Montana ~10 years ago. Beginning in 2022, the SECU Dinolab will open as a permanent exhibit at the museum, where visitors will be able to view the fossils in person. Until then, you can see photos of the T.
